Hi /ck/, let's make carne mechada and arepas.
Start with a chuck roast.
And sear it.
Into the pressure cooker with some beef broth.
40 minutes of high pressure cooking later, take it out.
And shred it, removing any bits of gristle.
Now let's start our sofrito. We've got onion, bell pepper, tomato, garlic, culantro, and cilantro. I'm using dried culantro because my culantro seeds have not yet sprouted.

Clean the pot and activate saute mode. Beginning with just the onions.
Once the onions are translucent, add the bell pepper and tomato

After that's cooked down for a while, add the garlic, cook a couple minutes more, then add the cilantro and culantro.
And mix in the meat. Add salt to taste at this point, and after cooking them together for a couple minutes, set it aside and keep it hot.
Now let's start our arepas. If you're not mashing the corn by hand like in the olden days, then this is the ONLY corn flour you can use. No other brand will do.

Mix the flour, a bit of salt, a glug or two of oil, and water until it looks like this.

Form the dough into patties. If crack appear at the edges, then your dough is too dry and you should add more water and reform them.
Now fry them in your favorite meme iron pan.
Since I'm frying these instead of baking them, they're technically tostadas instead of arepas. But there are no autists here that would get triggered by that, right?

Another very common one is black beans. To make them Venezuelan style, make the same sofrito I showed in this thread, but mix in cooked black beans instead of meat. To make what we call "domino", take that mixture and mix it with queso blanco. I've never seen Venezuelan queso blanco in the US, but Salvadoreno queso blanco is a very good substitute. The cheese should be white, hard, crumbly, and slightly salty.
We also do them with just butter and cheese, or with scrambled eggs. But really you can fill an arepa with just about anything at all. If it's edible, it probably tastes good in an arepa.
