Let's discuss Noma. Here are some food.
>"Asparagus and pine is a work of art. Noma is, as it has been compared to many times, a ballet, telling a riveting story full of comedy, drama, romance, and grace."
The legendary chef, Rene Redzepi, making an Asparagus and Spruce dish:

there is literally nothing wrong with this
>>7903607
Quality ingredients handled perfectly by talented chef.
>>7903609
yes, I agree, except for the sarcasm.
Edible soil made up of beer, butter, malt, and hazelnut + herb cream and radishes with stems climbing high out of the pot.
>>7903613
I'm not being sarcastic, me and my cousin are planning to eat at Noma.
Here's the changing menu
http://noma.dk/food-and-wine/
>>7903618
fair enough. I've had some friends eat there, they said it was a very interesting experience.
Aebleskiver and Muikku

>tfw it's not æbleskive sæson
>>7903622
> muikku
Little, almost trash tier fish that is commonly served during summer from paper boxes as a fried snack.
Somehow that dry little fish in pastry ball is more expensive than whole meal worth of those delicious little shits
>>7903717
it's one of roughly 20 meals, probably with some wicked seasoning and an exhaustive selectioning process.
>>7903621
its because its so fucking expensive they dont want to be seen as if they got memed
>>7903599
I got a couple pine trees in the back if they need more of those
>>7903757
they're so fucking rich though, they regularly go to high end restaurants
Fresh Peas and Fermented Peas, Aromatic Tea Broth
>>7903757
More than 900 chefs voted for Noma to be #1. And everyone who actually ate at the restaurant said it was a pleasant experience.
Brown Crab, Egg Yolk, and Herbs
People actually pay money for this shit?
Oyster complemented by seaweed oil, gooseberry, and buttermilk
Tartar and Sorrel, Juniper, and Tarragon
Pike Perch and Cabbages, Verbena, and Dill
The amount of work that goes into each plate is actually insane
>>7903599
do you eat the pine? i think fine dining is cool and all, but i dont think inedible stuff really belongs on the plate
>>7904759
wtf
>>7906581

>"Can we eat the pine leaf"
>"Please push the big pine leaves to the side."
Rhubarb and Milk Curd
>>7906596
what's even the point then? he didn't even really flavor anything with it. noma really gives fine dining a bad rep i think
>>7904759
The plating was way better when I was there three years ago. This is just a stupid smear and neither appetizing nor convenient.
I bet it tastes incredible though.
The irony is that you were probably trolling the /ck/ challenge on the basis that people were judging food that they weren't able to taste.
I'm guessing you've never been to a high end restaurant and regularly post in tipping threads.
>>7906611
I don't go on /ck/ that much, and don't go to restaurants that much. But I'm excited about going to Noma.
>>7906609
shit didn't even notice that, makes more sense now
>>7906632
I think Noma looks like bull most of the time but if you think you leave fine dining restaurants hungry, you've not been to many.
9/10 if you go to a Michelin starred restaurant, you will be stuffed. The food more often than not is extremely rich and the gaps in the courses slow your appetite down.
>>7906632
>i'm a poor loser who's never experienced a high end restaurant in my life and am resentful about it on an anonymous image board
>blah blah blah
Every.Fucking.Time.
>>7903599
A friend of mine at there recently, he told me it was pretty good but of course a bit pretentious. It's affordable as well if you compare how many dishes you get even with a wine pairing. I wouldn't go because I'm not into Nordic cuisine so I probably would go to Osteria Francescana for the same amount of money. But you have to see this not as fine dining but as a one in a life time experience. Maybe I'll go in the winter.
>>7906632
>"My dad took me to Red Lobster once so I know about fine dining."
They serve you up to 20 dishes, currently 16. If you leave hungry, you probably consider a family size pizza a snack.

>>7906614
All these things look so incredibly primitive.
As if they were foraging in a forest, and this is the best they could find to put on a plate.
I've had "Fine Dining" that was not this Nouvelle Cuisine bullshite... the chefs and sycophants pushing this garbage are charlatans and cheats.
>Noma is, as it has been compared to many times, a ballet, telling a riveting story full of comedy, drama, romance, and grace."
That B.S. is why I hate haughty "foodies" who blather on as if they are experts on the molecular structures of peas.
Me? I enjoy foods where the only "Story" my food tells is that it was seasoned and cooked well by someone that knows what they're actually doing.
If I order Cannard l'orange I better get half a duck, bones and all on a plate with a side of rstic fried potatoes.
If I'm instead served as tiny little wedge of duck meat balanced upon a single cube of potato... I swear I'm going to storm into the kitchen and fucking murder the "chef" who has the gall to pull such shit.
>>7906973
You wouldn't murder anybody you fat pussy. And you don't go to a restaurant like noma to fill your fucking maw just like you don't go to the louvre to look for shit to hang in your basement
>tfw my parents ate there with a friend this summer while I was busy with uni
I fucked up.
>>7903599
Are you supposed to eat the pine ?
I'm really confused, all those dishes look like what you'd get if you thought about parodying high-end restaurants. At the same time, I'm sure it tastes good.
Probably not my time of thing though.
>>7907037
I unironically long for the return of upscale dining with waiters in jackets or tuxedos.
>>7904759
How do you even eat that? You take a leaf and wipe up the sauce with it or what?
>>7907039
I think it was steamed with the pine purely for aromatic infusion/.
$6 with fries
>>7906973
>As if they were foraging in a forest, and this is the best they could find to put on a plate.
that is pretty much exactly what noma is.
anyway, if you want your big plate of roasted meat, fine, go to a different restaurant, but you won't get the variety you get at a place with a tasting menu.
>>7904749
As much as dislike these kinds of restraunts. this aesthetic is wonderful
the one thing at noma that really gets on my tits is the hen and the egg dish. that is the one thing they've done that makes me think it's a bit of an emperor's new clothes scenario.
it's such a patronising gesture and it's a gimmick. i don't think the dish would stand on its own without the whole process. but all the diner's doing is cracking a fucking egg. if there was some creative element to it i'd give it a pass, but it's not like you're encouraged to customise it in any way. you're just supposed to savour the privilege of watching a fucking egg you've cracked open sizzle on a hot plate. it's like it should be on the kid's menu or some shit.
getting the diner to participate in the meal can actually be a really cool thing, but ultimately who goes to a fine dining restaurant to eat a fucking fried egg with some woodsy liquor poured on top of it?
>>7907109
>food pics from japan
?
>>7907053
there's meat under the leaves, you just sort of drag it around the plate.
>>7906549

>>7907146
Yeah, maybe, but how did it actually taste?
Was it good?
>>7907389
and a million other things that are foamy.
>there are people on /ck/ right now that have and will continue to defend this
Come get your dinner you fucking "sophisticated" chu/ck/s
>>7907422
whoops forgot pic
>>7906568
Fair bit of prep and plating, but from the point of order to serving it seems very tame to me because of the small portions. Generally one small heated part with few components which can be done in little time and off to plating. Easily parallelized, highly predictable timing, highly predictable work load.
Nothing wrong with that, but compared to getting multiple large dishes with large pieces of meat/fish done at nearly the same time it's easy.
>>7903599
Looks like the type of dish gays and society women would love.
>>7906639
Holy mother of projection!
>>7907500
that's not noma.
>>7907401
you think anon actually can afford visiting noma?
lmao
>#1 restaurant in the world

>>7907543
why not?
>>7907556
Well it doesn't look very good and the composition isn't professional.
>>7903599
I couldn't find any trace of food even with an electron microscope. People who "dine" here must all look so sophisticated.
>>7907563
so? they could serve it ironically.
>>7907549

>>7907558
'stealing leftovers' is actually an idea i could imagine some chefs running with. like heston blumenthal could put something like this out at the fat duck with the justification that it 'conjures memories of my childhood'
>>7907578

no picture on the internet could remotely compare to how much I want to laugh at this
>>7907639
I took the "soil" thing as literal, with the plant actually being allowed to germinate in it, instead of a cutesy presentation ... which I find a bit beneath Noma.
>>7907679
Can you imagine Daym Drops or Joey getting all 20 plates of these things to go and reviewing each one in their car?
>>7907682
when the patrons ask if they should eat the bear faeces the waiters will be drilled to tell them to just look at it between bites.

>>7907692
it still has to be aesthetically pleasing.
>>7907703
many of these aren't

And is it one of those places you have to reserve months in advance unless you're Jerry Seinfeld?

"here in denmark, often we like to use manure to grow crops, and it is a natural habitat for mushrooms... we thought 'why take this manure, which has given so much life to our cuisine, and shared its aroma with the produce we use, and...almost, sort of disrespect it by not eating it?' so, we bathe it in lye, then slowly dry it in a controlled atmosphere until the maillard reaction occurs, and it creates this intensely rich flavour that easily rivals a slow roasted piece of meat but with so much complexity from the bacterial activity and an exchange of aromas with the plants. served alongside a selection of vegetable juices, you are tasting not only the traditional ingredients you are familiar with, but also the stuff which gave it life... it is a much more honest and comprehensive experience of nature"

So if I take a tomato, burn the shit out of it with a torch, sprinkle salt on it, and then smoosh it onto a plate and lay a pine tree branch over it, I can call it "deconstructed deep dish za" and be on the same level as Noma?

The replies in this thread.. No wonder 90% of the threads on /ck/ are about fast food/noodles/booze, you're all idiots. Are you even interested in food?
Overpriced pretentiout and overrated.
These are the guys giving fine dining a bad name.
Also : when the name of the restaurant is a synonym for mouth gangrene (https://en.wikipedia.org/wiki/Noma_(disease)) you know they're just taking the piss and testing how gullible the pseudo food elitists can be.

I came away feeling that I paid $400 for a giant circle jerk.
Pretentiousness for the sake of pretense.

>>7910624
Most places like this don't drop you a single plate, you're basically eating at least half of this stuff.
>>7906581
You can eat spruce bough though. The fresh tips in the spring are the best, but regular pine needles can be made into tea or mush too.
>>7910659
Pine needles are an abortifacient, I'm not sure what's up with spruce needles. Natives made a spruce needle tea full of vitamin C but I feel like consuming conifer needles regularly is a bad idea.
They are full of tannins and phenols and the like that function as anti-insect compounds.
>>7910669
I call this one "a single fire roasted green bean with leaves and flowers."
>>7910679
As a Scandinavian I very much doubt that since it has been used for food since pagan times. Googling it only turns up American ponderosa pines
Making pine needle tea and chewing the tips people do even outside the survivalism clique

This is hilarious.
>>7911203

An onion. Baked at extreme heat so the peel turns to ash and the centre is baked. Common chef thing. Try placing a leek directly on your preheated (electric) stovetop until it's completely black and ashen, cut it open and eat the core baked and steamed in its own juices. It's awesome.

I know, its hard for you to imagine that someone truly cares about what they do, or have a notion of passion, but try at least

God, you are such a moron. If you dont want to eat at noma then shut the fuck up and enjoy your steak and chip restaurants or wherever the fuck you go to be a miserable person.
You dont go to noma to eat a hamburger. But im afraid youll have to accept that thousands of people, critics and chefs have been to noma and fucking loved it.
You go there to get stuff served their way, not yours

Foraging for ingredients then experimenting with ways to showcase their unique qualities and the environment in which they're found, without excessive use of fat or thickeners or whatever, as a way of helping you appreciate the edible ecology of the local landscape, is a quite clear and direct concept.
I don't think you could possibly argue that what they do at noma is lazy or disrespectful to the diner - it can be a bit patronising and sanctimonious though

I am reminded of a movie called Art School Confidential that I had the displeasure of being compelled to sit through.
There's a scene in the movie where one student produces a very basic art piece that is highly acknowledged by his peers, and another student sees this and replicates the first's style exactly. It's to the point that during presentation the two art works are identical.
The peer group praised the first student's work and tore the second a new asshole, even though both products were identical in every way, only because they had advanced knowledge of which piece came from which student. The critiques had no other basis. For added insult the praised student was actually not even an art student, he was a plant from a local police department investigating shit on campus.
What I'm trying to say is, if you took a dish from a Noma chef and held it side by side against a dish that was physically identical in absolutely every way but created by some nobody in his home kitchen, you would praise the plate from Noma and your assessment of the home dish would be either: god what a phony and uninspired dish, awww look at the troglodyte trying that's sweet, the important elements are there but this simply isn't as robust as what Noma creates. Or, a combination of the three. It doesn't have to make sense it just needs to have a sufficient amount of cognitive dissonance.

>and another student sees this and replicates the first's style exactly
Have you considered that he got belittled for being a plagiarizer?
Whats the front of house staff like at Noma? Do they do anything cool?

>At any other place without the hundreds USD$ price tag it would have been considered as bad customer service.
Why? No one is forcing you to eat anywhere, you can go wherever the fuck you like, to eat what you like.
So why would you go to a place you dont like, and then be a fucking asshole about it?

The customer, in your case, is wrong
If you want it "your way" you can go to MacDonald's
>noma defense force ACITVATE

What qualifies as disrespectful behavior in your book, exactly?
How does one say "I'm not saying x is true, but x is 100% true" with a straight face?

No man, that burger king you fuck up

i don't think what i described is in any way shape or form a 'bad concept'
>>7911968
if you consider that disrespectful then perhaps i just mean it in a different sense - i don't think they're taking advantage of the diner in order to fleece them. elaborate measures are taken to deliver a valuable product.

>carbonised onions
the bit you eat is not carbonised.
>ants on shaving cream.
ewwww buuuuuuugs!!

500 DOLLARS WASN'T ENOUGH TO AFFORD A WHOLE TART SO THEY GIVE YOU HALF
I CANT FUCKING BREATH
>People spend half of $1000 dollars to eat this shit.
>>7912128
I can imagine them giving you a full tart, but with a huge bite out of it, and claiming it represents how we can lose things we love in life.
Hipsters and foodies would eat it up and ask to suck the chefs dick after dinner.

You don't order at a restaurant with a menu like this, you poor fat fuck.
>>7911420
What fine dining restaurants have you ever been to? Are you not familiar with the experience of eating from a coursed tasting menu? You get several dishes, some of them just an interesting bite prepared in a novel way using some of the best ingredients available.
