Make caramelized onion/browned garlic/shiitake mushroom gravy and mix it with Op's style of pasta.
Basically caramlize onions low and slow like you're making french onion soup, using a fair amount of oil/butter. Add in garlic about half-way through to brown (I also like adding freshly ground dill seed). Meanwhile, simmer shiitake mushrooms to make a stock. When the stock is ready, crank up heat on the onions/garlic and stir, when it looks like it's about to burn start pouring in the mushroom stock while whisking. Once fully incorporated, season the sauce with salt/pepper/etc and toss with the pasta.

Err, add flour and whisk in before cranking up the heat, continue whisking as the heat increases.

I find it mealy, so I use whole wheat noodles for exactly two reasons only:
1) cold pasta salads
2) winter squash sauces, like pumpkin-sausage-cheese. Roasted zucchini.

Roasted pumpkin with pesto
Chop pumpkin into little bite size bits, roast then chuck in pesto slathered pasta. Pesto is easy, chop basil and cashew finely and put in olive oil and garlic if you like. Top with parmasen.
