Cooked 2.25 (approx. 1kg) boneless skinless chicken breast in the cockpot, with a couple tablespoons of chicken base and a 1/4 cup of butter for the last 6 hours.

I feel for you. As a general rule, enchiladas use corn tortillas, not flour. Flour tend to get gummy/soggy. Additionally, make your own sauce, it isn't hard and it kicks the shit out of anything from a can. We won't get into your laziness with shit like the cheese or anything.

Beans on the side, chiles can go anywhere. The beans inside would just make the entire thing extra mushy. Toast your tortillas in a pan until they brown a tiny bit (but don't get unrollable). Put some of the sauce with the chicken and the rest over the top, though I'm unsure you'll have enough to even cover the outside properly. Put most of the cheese you're wanting to use on the inside and use a bit on the outside, but not a ton.
