Huevos rancheros, tacos al pastor, pambazo are all very good. That place isn't awfully authentic when it comes to Oaxacan cuisine though.

They don't have great dishes found only in Oaxaca like pozolé, sincronizadas etc. I don't even think I saw ceviche. Pupusas despite being primarily Salvadoran are very popular in Oaxaca too and are arguably a staple food. Plus, burritos are a northern Mexican/Bajan/Texan thing.

Pretty much all Mexican restaurants around here sell burritos just because, so I'm not turned off by that

But pozole is not just a Oaxacan thing, I went to a restaurant (Mexico City/Puebla style) and they had pozole with the clear broth. I thought it was kind of bland but it was hearty.

I don't know about the other places, but here in Vallarta we have many mexican food places, you can even find autentic taco stands a couple of blocks from the main roads. Pizza is good, I don't know what's your problem.
