So /ck/, how do you guys make your ketchup? Recipes? Tomato Paste or Peeled ground tomatoes? Corn syrup or sugar?

I've never made my own ketchup. Every homemade ketchup I've ever had at a restaurant has been a disappointment that pales in comparison to bottled ketchup.

Buy a press pot. Like the ones used for making coffee. Yes, those. Just make sure it's never been used for coffee making or your 'tchup will be ruined. Tea's okay, though.
Next, put dried tomatoes in it.
Push the plunger down to pack the tomatoes, but not too tightly, then pull the plunger back out.
Boil some pickle brine and pour it over the tomatoes to come a little over the top of them, then place the plunger down again, gently on top.
Let steep until the tomatoes are rehydrated.
Chop the tomatoes and add to a blender with just enough tomato juice as necessary for processing.
Blitz smooth then pass through a sieve to catch seeds and skins.
Pour into a sauce pan, reduce to desired consistency, then add sugar and onion powder to taste.
Adjust salt, if/as necessary.
That's about it.

cayenne pepper
reduce on low heat 1/2 hour - 1h
fill up in glasses when still hot
i understand you anon, but honestly, it's too much effort to end up with something very close to some good brands of ketchup
there is an italian one called "Mutti", better that almost all of my attempts to make ketchup, at a very lower cost than making my own
