Most of the things that people in the U.S. call "yams" are actually sweet potatoes.
yams are usually much bigger, and have a harder, almost bark-like skin

Strange that someone would call sweet potatoes yams. They're not even in the same botanical species. I think sweet potatoes are best roasted like a baked potato. It gives the sugars time to caramelise and you get molasses type flavour from them. Also good as chips, by which I mean British chips/fries not crisps.
It is actually my dinner every night.
I take about 4 lbs sweet potato, slice them up into medium-small sizes, then just bake them with nothing added on 300 F for 2 hours.
If I don't want to wait then 450 F for 25 minutes but it isn't as good.
I've found that they crisp up a lot nicer than I had thought so I am going to keep them in large cookie sized slivers next time and see how they turn out.
