I make pelmeni often, they're perfect for a quick meal when you have a bunch frozen.

you should check out CookingInRussia's books for his youtube channel. There's some interesting stuff about the history of food in Russia in his books.

Pork and beef with onion usually and I try to get the highest fat content ground beef. I tried putting Dill in a few, do not recommend. Someday I'll try grinding the meat myself and see if it improves the flavor.

man I love piroshki. my grandmother would make filling using beef, pork, onion, hard boiled egg, and liver. they're so much better hot out of the fryer. reheated in the toaster oven is not bad though.

the first time I made them they were dry. the extra fat content helps, last time I added some chopped pork fat in the mix. extra onions seems to add moisture too.
