I have never seen one of those on /ck/, so I think we should get one going. There's much more to its culinary traditions than fucking paella or tapas and it is nowhere as pretentious as french "cuisine".

I got kind of tired of beans, pork, and potatoes after a while; not a very vegetable heavy cuisine, except in Andalucía.
Still, it is pretty underrated imo.
Any bacalao dish is GOAT. Chorizo, morcilla, cecina, jamón, salchicón, any cured meat really is fucking dank. Huevos rotos is great drunk food.
Best food is in Basque Country and Andalucía. Basque for sheer variety of pintxos and great seafood dishes (octopus senpai) and Andalucía for cheap ass tapas and Arab inspired food. Try solomillo al whiskey, a platter of hot pescaíto, and espinacas con garbanzos in Sevilla with a caña of Cruzcampo and tell me Spanish fold isn't great.
