Why is horse radish such an underrated condiment?
Probably because it tends to be overpowering and only really stands up to certain applications.
Radish is just way too sharp. I don't even like it on roast beef, so there's nothing else I imagine I'll want it on.

I use pic related, ketchup, a splash of fresh lemon juice, and a lil' Old Bay to make my own cocktail sauce.

I use it for sandwiches and sometimes mixed in potato/pasta salad dressings but I never know what else to do with it. Then the jar inevitably goes bad and I wonder why I even buy it. Then I buy it again.
