Squirrel slow-cooked in a cast iron dutch over, with country gravy over mashed potatoes

My mom refuses to eat it (she's squeamish about eating rabbit too because of the "cute and fuzzy" factor), but my dad would go squirrel hunting and made it for us kids whenever he brought some back.

Don't be scared of the tree rats. I'd strongly recommend a good brine or other soak to remove any wild flavors along with using peanut oil to fry in a pressure cooker.

I've never cooked with it, but I have had squirrel stew. It was pretty good. I would describe it as a cross between rabbit and duck.
