There seems to be a lot of people attempting to cook steaks lately on /ck/ and fucking it up. It's so easy. If you follow these steps, there is no possible way you can ever screw it up. It's foolproof.

Here's a 1 lb bone in ribeye. Some people let it come to room temp. I just pulled mine out the fridge.

This is the only seasoning you need for your steak. Sprinkle liberally and rub on steak.

This is the oil used in the pan for cooking your steak. It has the highest smoke point and neutral taste. Canola, every time.

Coat the bottom of the cast iron with oil. Lay in the steak. There should be only kosher salt, no pepper or anything. Pepper will burn.

2 minutes.

Flip over the steak into a plate lined with aluminum foil. Rub other side of the steak with unsalted butter. Tightly seal the steak with foil, sealing inside juices and melted butter.

Wait ~10 min as steak absorbs the juices and butter and comes to temperature.

Cast iron is overrated and unnecessary if your stove gets sufficiently hot. The secret to getting a good steak sear is to use something to weigh down the steak. I use a brick wrapped in foil. More surface area + better heat transfer = perfect crust

I think that's probably excluded for a reason. Depending on the thickness and heat source, results could vary. He says resting doesn't affect evenness.

Not OP, I just never understood the point of clarified butter, it tastes different. I've always used OP's method of cooking steaks myself. Sure, his steak could be a little "harder" on the sear, but he did a fine job on it. I've seen much, much worse.

Clarified butter isn't the same as ghee. Ghee should have little to no flavor.

A higher smoke point means you can cook food at a higher temperature before the fats start to break down and taste acidic.

And that sear is pretty fucking horrible. It's looks like it was water steamed in the middle.

Very very slightly, yes, but ghee that is purely fat should almost taste like a slightly buttery vegetable oil. If the ghee is browned then it isn't meant for cooking, or at least it will smoke like a bitch if you use it for steak

Crust is weak but tbe with a NY strip. There is still a gradient near the bottom, so I'm guessing you didn't flip the steak during the bake?

For a lean steak like strip, IDK if I would recommend the reverse sear. Too much fat drips off. I think sous-vide would be better.

That was actually one of my first tries with reverse sear, and the only time I took pictures. I've since gotten better at it, You were right about not flipping, I thought putting it on a rack would make it so I wouldn't have to. I was also being irresponsible and didn't let it come to room temp before baking (I find that makes a huge difference in even cooking). I now let it rest for 10 minutes under foil covered in butter instead of in the open.

Honestly I can't stand fatty cuts of meat, I'd rather have a nice lean steak over a fatty cut any day of the week.

Why are you not using oil in the pan? Is it because you don't like the greasiness? Steak doesn't absorb oil like batter does, it won't make it unhealthier. You can pat it dry after the final sear if you wanted I guess

Oil shouldn't be any more than a single mm when it's sufficiently hot. How does oil impede the sear when the whole principle behind adding fat to the pan is so facillitate heat transfer?

If you only coat the steak there will be pockets there's barely any oil, resulting in charred spots. You can see them in your picture. Doesn't make for a very pretty looking steak.
