Seeing as it's Cinco de Mayo, I figure we should have a thread about Tapatio since people will be drenching everything with it today.
So, what are your thoughts on this stuff? Anything you like putting it on? Good or bad, why is Tapatio the most popular hot sauce condiment next to maybe Tobasco?

Not a fan of Tapatio personally. Tastes too metallic.
I much prefer Valentina Extra Hot. It's just North of mild and is about a buck for a 12oz bottle. Totally worth it.

I think Tapatillo is more of a regional thing. Growing up in California, I love it. Moved out east and nobody has ever heard of it.
I think universally #2 is Frank's Red Hot. In the south I see Crystal or Texas Pete a lot.

I prefer valentina on tacos but use cholula on everything else
Tapatio is the best hot sauce I've tried by far. Compared to Sriracha which is too sweet and syrupy, Tobasco too vinegary, Louisiana too salty and not spicy. Tapatio has been the right balance.

I had a hot sauce in Ecuador I really liked, I think it was called Aji. Not to be confused with the green sauce of the same name, it was red and came in a small plastic bottle.
