Bake, fry, boil, mash, roast, stick 'em in a stew.
Normally, I'd say hashbrowns for days, but grating those tiny one would be bothersome. Those tiny red ones make great roasts with some rosemary, salt, and pepper. Toss in oil, spread out in a pan, throw in 350 oven for like 20 minutes, or until soft.

I just cut and boil them, five pounds at a time. After that i just take them to work with peas and butter. It's Spartan, but i like it. One could also just toss them into soup at the last minute.

If you wanna get white trash with that shit then boil a bunch of them up, chop 'em into bite size chunks, and then toss 'em in a big bowl with some crumbled bacon, sliced black olives, and sliced green onion. Then toss in some dressing; my grandma would make this crazy good homemade shit with buttermilk and fresh herbs from her garden... but my aunt, being lazy, would just pour a shitload of hidden valley ranch on there.
