I've had Popeye's once, they were pretty good. much better than KFC or other fast food chicken. Grocery store deli chicken strips meal plate can be okay and is super cheap.

Personally my favorite is a colorful local place. They'll give you a big plate of hot crispy chicken and fries made fresh in front of you with a cup of coleslaw and tasty as fuck dipping sauce they make in house. It's like $9 but so fucken good.

There's a place where it's basically $1/tendie, but each one is half a chicken breast. Brined so it's not dry at all. The breading is just a little spicy (at least here in the South). And they make this really nice honey mustard to go with it.

Deep fry my own Master Race.

My recipe is:

>Two Chicken breasts cut into fun tendie shapes
>~2 cups of white flour spread in a long pyrex dish, with liberal amounts of Black Papper, Old Bay blackened seasoning, and Seasoned salt mixed throughout.
>3 eggs & a splash of milk whisked until smooth in a smaller pyrex dish
>Frying pan w/ canola oil to ~1/3 of the pan's depth.

Simply place all your strips in the egg wash, put about 6 to 8 in the flour & spice mixture, coating them thoroughly. Then throw into the pan when the oil is thoroughly hot (and keeping the burner on a medium-high heat)

Never disappoints

Scores rotisserie chicken is subpar compared to Benny/St-Hub. But it is less salted and usually cheaper than Benny/St-Hub. Chicken tendies are probably the same supplier in all those restaurants. Best bang for your buck is Coq-au-Bec. Same shit but less pricy.

And you're using an egg + milk wash? I don't know the minutiae of the science behind it, but as far as I've figured, the egg is a thick kind of glue, and the milk (being a water-based liquid with very well integrated fats) will work to further affix the egg to the chicken, and the flour to the wash.

Oil will always wash off some flour, my suggestion is to make sure the oil is really hot and will begin to harden the flour on contact with the oil.

Also, make sure you're really really thoroughly getting flour everywhere on that chicken. That's why I suggest a long pyrex pan and a pretty even layer of flour+spice throughout. That way you can flip your chicken around and get flour into every nook and cranny. Before you fry them too, if that's not working, you can take a fork or spoon and heap some of the flour mixture on top of that tender, shake any excess off gently, then throw it in.

Also, as an addendum, you could also try double-coating it. This would be where you go

Egg wash -> Flour -> Let the Tenders Sit for a minute -> Egg wash -> Flour -> Fry

And this should make your tenders extra crispy

My personal preference is a single coating, but try it out if you're interested anon

I don''t know the exact scientfiic reason for it but suposedly it helps the breading to adhere. It's also the process documented in every cookbook that I have ever read. Standard breading is flour first, then egg wash, then the breading itself (which may be flour again, but could be other things like panko, crushed potato chips, breadcrumbs, etc.)
