Can I ask you something?
Whenever I try to fry potatoes in my stainless, they end up sticking and then there ends up being a huge crust on the bottom of the pan and the potatoes don't really brown. Am I not using enough oil? I don't want them to be greasy. Or am I just not being patient enough for them to release themselves from the pan?

Possibly, but hard to answer because you didn't mention how much oil you used.

I was leaning toward not enough oil because when I finally turned them, trying not to rip them apart, they were decently brown on the one side.
I've also realized I need a smaller pan as my 14 inch is too impractically big and there's lots of hot patches. That is probably a big reason too.
