I'm not a 3-star chef but every milk replacement I have tried for cooking/baking has produced shit results. That being said, it is my understanding that even if you are lactose intolerant you can probably still eat cooked foods containing dairy because there simply isn't very much of it in a given serving. Obviously that wouldn't apply to thinks like ice cream, but a cake containing milk in the batter or a pan sauce with a little cream in it shouldn't be a problem for you at all.

I cook for my s/o who is severely allergic to dairy (can't even eat food that has touched it). Most dairy substitutes are pretty good these days. I baked a "cheesecake" over the weekend and I doubt most would be able to tell the difference.

For cooking and baking I like unsweetened cashew milk, it's the thickest faux-milk available (closest to the real thing imo). Faux-butter burns easily, but is fine in baking and not searing in general. If you need heavy cream then silk has a non-dairy creamer that I've been fairly successful with. They also have yogurt that I've used to make naan. There isn't a plain option, but vanilla had turned out okay in my experiences. I've mostly used it in Indian cooking and it does very well for that. The premade fake cheeses are awful really. Fake cream cheese is okay, as with sour cream. I use them both to cook with, although I wouldn't eat the sour cream as is. Things that don't exist (eg. condensed "milk") can be made at home using other non-dairy products.

I've been very successful with it. You don't have to treat them differently in most cases that I've noticed. Did you try long ago? Products have gotten to be pretty decent in my experience.
