covered tightly and into the oven for 2 hours
some onions and jalapenos in oil with a pinch of salt
brown sugar, black pepper, cayenne, nutmeg, ancho powder, paprika
a big can of diced tomatoes and a small can of tomato paste
hit with the stick blender
deglazed the pan i seared the pork in and added the liquid to the sauce
cooked the potatoes in salted water, drained and cooled them
