One of my favourites is sausage and onion casserole

>Ingredients
1 tbsp olive oil
8 sausages
3 onions (in half then in thick, half moon slices), sliced
2 tbsp plain flour
500ml beef stock (or chicken)
3 tbsp chutney (any type)
1 tbsp Worcestershire sauce
1 tsp black pepper

>Method
Set the slow cooker to HIGH
Meanwhile, heat the oil in a frying pan, add the sausages and quickly brown on all sides, then transfer to the slow cooker
Add the onions to the frying pan and cook, stirring occasionally, until soft but not brown - stir in the flour and cook gently for 1-2 minutes
Make sure you scrape all the flour from the bottom of the pan
Remove from the heat and gradually stir in the stock - bring to the boil, stirring continuously, until thickened
Stir in the chutney, Worcestershire sauce and pepper
Transfer to the slow cooker
Turn the slow cooker down to LOW, put the lid on and cook on LOW for 5-8 hours

1 boneless, skinless chicken breast if you're poor, 3 if you aren't, or even better is 2.5 lbs pork shoulder, also boneless
1 16oz. jar salsa verde, i use one with guacamole in it
2 15oz. cans cannellini beans, drained
1 15oz. can pinto beans, drained
1 Tbsp ground cumin
1 tsp dried oregano
¼ tsp cayenne pepper
¼ tsp freshly ground black pepper
approximately 1-2 cups chicken broth
4 oz shredded pepperjack (optional)
sour cream (optional)
salt to taste
lime/lime juice to taste (optional)
tortilla chips (optional)

Put the meat, onion, garlic, jalapeno on the bottom of the crockpot.
Add the beans.
Pour in the salsa.
Put the spices on top.
Add chicken broth. Better to go slow, you can add more later if necessary.

Stir it up and cook on high for 4 hours.
If you used chicken, take the breasts out and shred on a cutting board and readd, if using pork it should fall apart easily with a sturdy utensil.
If you have one use a potato masher on the beans in the pot, if not take some beans out and put them in a separate container for mashing. I usually have ~80% mashed so it thickens up nicely.

At this point it's done basically. I like it over rice, it makes it go further and doesn't take anything away. My favorite serving style is over rice with lime, sour cream, and tortilla chips, but the cheese isn't bad either. If you make it thick enough it's a solid once refrigerated and can be easily fried up in a skillet with the rice and a little bit of oil when you want it again. Good in tortillas/burritos too, or just fried up with an egg mixed in.

Cilantro would be good I imagine but it tastes like soap to me.

I got a crock pot for christmas and so far I have only made pulled pork and it was way better than i thought it would be. There's a shit load of recipes out there but the one thing I will say is that it can stand up to a LOT of rub/seasoning. I felt like I went overboard with the rub, but in the end it could have used much more.

One person suggested using rub AND alton brown's taco seasoning so i think.I'll try that next time.

This is the only pic I have. 7 lbs of pork, 14 hours on low in the crock pot. So tender

Of course you can. Braising is the whole point of a slow cooker. The discussion is about the cut of meat being used. Why choose a pork loin for braising when a cut containing fat and connective tissue will turn out so much better? Why braise a pork loin when you could braise shoulder or leg instead?
