Can someone explain how to correctly use vinegar in cooking?

A splash in soup is good, adds a nice acidity to it. You can also make a vinaigrette for salad.

Well you use salt and sugar if you are cooking from your head. You can use it like that i think it cuts through and can liven up things. People use citrus i guess for similar stuff.

Aside from that you can use it for a dressing or i guess even deglazing if you are pan frying.

Plenty of recipes ask for this though like stews/casseroles and general meat/sauce dishes so I'm sure you can find something.

I personally use it mainly if i'm cooking pulses as it gives a bit of life or in pasta sauces if i feel like i overdid the balance of flavour.

Asian vinegar is also a good one to have for their dishes.
