I cured a half a salmon with 45:45:10 salt:sugar:beetroot
It was too strong and I much prefer smoking salmon, but if you know what you're doing it's a nice delicate taste.
Lemon, garlic, salt and pepper are all you ever want to add to good salmon. Less is more for any good ingredient.
I also like creamy salmon risotto with mushrooms.

50/50 salt sugar with a lot of fine herbs (parsley, chervil, chive & tarragon) + vodka
wrap tightly and press with a weighted sheet tray for 2-3 days at fridge temperature
Wash well, dust with fennel pollen and slice thinly
Basil and/or other soft herbs work. I feel like the alcohol and pressing is really important to getting the right texture. The rinse is important, too, so the fish isn't overpowered by salt/sugar.
