Back when I was fat as sin, I used to dip grilled cheeses in a Ketchup/vinegar/ranch dressing combo.

My all time favourite is one I made using leftover pork meatballs and the marinara sauce which had rosemary and garlic in it, on some sourdough loaf.

Dipping is OK, but as soon as you add anything like your filfthy "bacon grilled cheeses" it's a melt, not a grilled cheese. You can add different types of cheeses, breads, butters, etc. I myself even partake in a melt if I feel as if it's so.

I do use butter from time to time as kind of a treat I guess, but when I normally make grilled cheese sandwiches, I just put it straight in the pan.

One of the skinniest people I've ever known claims to use a whole stick of butter. I'm pretty sure he was exaggerating, but I sure don't mind a generous amount of butter. That's part of what makes the sandwich for me. I understand not wanting it to be greasy though. That's just sort of what I expect of grilled cheese sandwiches.

It's way less work to just melt a little pad of butter right in the pan or griddle and then throw the sandwich down on top of it. Repeat when you flip. There's also the secondary benefit of not needing quite as much butter for basically no compromise in taste.

But that seems like a LOT of work just to tart up something that is supposed to be for children with no taste. It's like putting lobster in mac and cheese or dousing a $60 steak in spices.

If you're going to be grilling up something worthwhile anyway, then MAYBE it's worth it. Otherwise a griddled cheese is fine.

Place I used to work used to make a handful of sandwiches and wraps sort of like that, using those oval sizzle plates (can't figure out what they're actually called).

You could load up the plate with cheese (and whatever else, such as turkey and bacon for one of the wraps) and then you could put it on the grill, in the convection oven, or in the pizza oven, depending on whatever was easiest at the moment.

There was literally no difference in the result, aside from people burning the cheese when they threw it in the pizza oven.

We had one sandwich where the bread was grilled with a pesto aioli, but that was done earlier in the day, wrapped up, put in the fridge, and thrown in the oven when an order came in.

We did put the tortillas on the grill to heat them up for wraps.

I make this maybe twice a year.

Cheddar, boursin herb cream cheese, onion or chive, jalapeno, salami/bacon whole wheat or sourdough bread. I will serve it with fries or chips, and a bowl of either french onion or tomato soup. I shamelessly admit I will dip a little in ketchup or sriracha.

Like I said, twice a year at most, don't eat junk often. This is just comfort food at its best and reminds me of being a kid.

first carmelize some vidalia onions in bacon fat until it almost becomes like a jelly, set aside
take a couple slices of a hearty bread, i think i was using canadian white, and spread more bacon fat on both slices.
preheat your pan, and put one slice in it while it warms up so you can start assembling it while its in the pan.

other ingredients as follows-
-hoffman sharp cheddar
-hormel cure 81 sliced ham
-and of course the onions

top it with the other slice of bread, throw another skillet on top to press it, cook it slow so everything melts and gets a nice crust, flip it a couple times and enjoy

like god jizzed in my mouth
