I don't really care for the texture of wilted piles of spinach. I have a whole bag that expires soon though. How do I use up a whole lot in one meal?

i usually saute it with garlic and olive oil, then pulse in a food processor until smooth for a pizza topping.

Do a stir fry and dump that entire bag in at the end until it wilts.
With carrots, bell pepper, onion, garlic, ginger, chili's and a protein, it'll be fucking delicious as is, or over rice.
Follw this and you'll go buy sum more tomorrow:
Heat sunflower oil in pan,
Add finely chopped onion,
Cook till golden at medium heat,
Half way trough add garlic,
Then add rinced chickpeas and stir-fry for another few minutes,
Mix curry powder with warm water to obtain a paste,
Add spinach to pan and when to heat also curry,
Add water if too dry.
To be served with basmati rice.

I love putting fresh spinach in soup. I'll just get some chicken and dumpling soup or something and pile a shitload of spinach leaves in there. Not sure if that is going to be essentially the texture you're looking to avoid of if you just don't like eating the spinach by itself on a plate.
