I made some sort of chicken taco soup last night, will post pic when I get home.

Bought a rotisserie chicken. Ate the wings and stripped the rest of the meat off. Boil carcass with some carrots and celery for at least 2 hours. Strain to get a very basic broth.

Fry onions in either oil or chicken fat from the skin you managed to not eat. Add chopped green pepper and soften them both up. Throw in some garlic and fry for about a minute. Then add a can of diced tomatoes and blended chipotles in adobo (this is where you control your heat). Also added cumin, chili powder, oregano, S%P.

Cook for a bit and add your chicken broth to desired thickness. Once it has gotten to a simmer add a drained can of corn and 2 cans of drained black beans. At this point I smashed a handful of the beans to thicken it up. Simmer for about 20 to let those flavors marry. Add your chicken and let it warm up. Finish with a squeeze of lime, 1.5 limes was surprisingly too much for all that.

Garnish with your choice of cheese, sour cream, cilantro, lime wedge, green onion, tortilla strips, and avocado. I just went with sour cream and avocado last night.

Shit was pretty good considering how little cooking was actually done.

Yeah not the best visual experience but I must say I'm liking the taste. Also definitely just made this up like 5 minutes before I started posting.

Went with cauliflower for a sauce figuring white on black would look good but it didn't maintain. Too much noodles too but I didn't want to waste and it was the last of the bag. Only second time trying out the black bean noodle dealio. Did a red sauce yesterday and it just didn't taste right together.

Not sure how to present the sauce better either. If non vegan I'm sure a cream or cheese sauce would substitute well and be cleaner presentation.

Over all I really like the flavor and texture etc that came together. Next time I will just leave the Brussels sprouts separate since they really didn't take on any flavors and would present better on top of the sauce. Any other recommendations for improving presentation are welcome.

Vegan and don't eat grains except corn. They just make me fat and I lost a bunch of weight cutting them out and don't want to add back in. I allow myself very small amounts now and again. And I don't mind the haters. If ya can't take the heat get out the kitchen right?

On the black bean noodles....they are ok. Not my favorite in regards to pasta substitute but certainly not bad. Definitely al dente. Spaghetti squash is top tier but this is probably next runner up for appearance and texture similarity. I usually just julienne zucchini though for best taste aside from spaghetti squash. Also cheap and available. Summer pasta for me = zucchini. Winter = squash.

I made a Sichuan Salsa verde i took from either Mission Chinese cookbook or Lucky Peaches, 101 easy asian recipes.
Threw it ontop of a a chunk of pork butt and let it go in the slow cooker.

Beer by itself doesnt make you fat, a lot of people dont think about how many extra calories alcoholic beverages add to meals. It is harder to lose/maintain weight when drinking regularly than just having water because of more calories to keep track of.

Sounds good...but...from my experience cauliflower does not like to roast evenly enough for that method to work awesome all the time. Also you won't really get any crispy textures. It's labor intensive but I recommend cutting your florets so they are flat on each side. Follow the recipe for getting them just tender and instead of finishing by roasting, sear them on cast iron. The difference is HUGE. The additional flavors and textures created are awesome and you will enjoy the dish much much more. I'm gonna have to come up with a vegan dip and try it myself too.

Start flossing. Once a day at night is enough and you can even skip now and again but.....floss. The shit I pulled out of my teeth once I decided to start was scary. I also used to smoke all sorts of drugs etc and have spent thousands and thousands to save myself from becoming toothless as a matter of fact I am STILL paying and working on my teeth and I haven't smoked drugs in years. Do it tomorrow and don't stop. As long as you floss/brush before bed you should be good. Be aware that you may have already damaged your teeth severely and will need serious dental work. Get it done. No one likes to be a gap toothed mofo. True life advice from one anon to another. Also stop smoking the drugs. Weed is least damaging but the others will fuck your teeth even if you maintain them. Shooting up is safest and healthiest way as long as you do it right. Not that I recommend the drugs. Been sober for a while now and once you get there its nice. Sobriety itself becomes a high once you come down.

Biggest piece is making sure the cauliflower is dry. I could have baked it for about 45min.
Also, I put provolone down, then sauce, then mozz, then pepperoni, then a little more mozz. Baked for about 15. Oh and add some type of "Italian" seasoning to the crust. I didn't use the recipes crazy goat cheese etc

i've never kept oil for longer than a month. However, I'm sure if you strained, bottled, and refrigerated it, it would last quite a while. I can't give you a date for lack of knowing, but i think that 6mo wouldn't be an issue, even with intermittent use. Oil doesn't "go bad" as quickly as you would think, even if its stored in the fryer with the lid on.

Pic is my attempt at sauce and noodles from today. Practice is slowly making perfect with learning how to julienne by hand. Tasted good but I should have used more tomatoes for the sauce. Balance wasn't quite right.

There's plenty of parts of CA that aren't so expensive, just like elsewhere. It's just the most desirable places like the bay area that are like that, and even then it's completely feasible if you are willing to make tradeoffs (living with flatmates, etc). It's a matter of personal preference whether those tradeoffs are better or worse than living somewhere cheaper but less "interesting".

Dallas was okay. Houston is awful in the times I went, at least the city area.. Only good thing there is MD Anderson and the Woodlands. Maybe the outskirts are okay and I just didn't get a good intro.

Not as much of a shit hole as Montgomery, AL though. The crap from the city spread into towns even 30 mins or more away.

Time is a chief ingredient in quality sauce. I've tried shorter times, but it isn't the same.

There was a family at the church I grew up in where the father was Italian and the mother Lebanese. They made this recipe except increased by 8x or more for church gatherings, or the hospitality weeks of the year we house homeless and made meals for them.

So delicious and nostalgic. Learned some good recipes from that family.

Doing some writing work in the kitchen while waiting. At least I can do some of the work inebriated (Jim Beam).
