roast potatoes + my first attempt at hollandaise
the sauce was perfect in the pan but by the time i plated the potatoes and then poured the sauce onto the plate it was thin and had separated

Keep your hollandaise in a bain-marie until you plate, it'll help keep it from splitting

put oven on highest setting and put baking tray inside
peel potatoes
cut into small pieces
put into pot, cover with cold water, salt
bring to boil
simmer for a few minutes
take baking tray out and put clarified butter on
add salt, pepper
drain potatoes
shake colander
put potatoes onto tray
mix
spread them out so there's space between each one
try to get as many as possible near the edge of the tray
put into oven
after like 20 minutes, turn them over
done
