Is there a trick to making bread that's crusty on the outside and soft on the inside?

Steam is what does it. A lot of no-knead recipes will have you bake it in a dutch oven or similar oven-safe covered pot to trap steam. Or you can preheat a metal baking tray below where you want to bake your bread and pour water on it right before you put the bread in.

It depends what setting you use, they have good slow mixers, sometimes you fall into trouble when you get too impatient and that's when you end up over-kneading
