What are your favorite "leftover" meals?
ie- meals that are good the first night but then are also easy to warm up for the following week and don't lose much quality from sitting in the fridge and being microwaved?
Soups, stews, pasta sauces cooked for a long time, cottage pie, that sort of thing. Curries are good too
London Broil soaked in its juices an extra day in the fridge an extra day is god tier on sandwiches

Baked macaroni and cheese I've found does really well microwaved again the next day or two.

OP here. Baked mac and cheese is one I do a lot even though I don't think it reheats very well. My sauce always tends to break in the microwave and it gets greasy and then it doesn't heat uniformly. I still do it a lot anyway just because I love mac and cheese.
Anyway my current favorites to do are:
Jambalaya
Chili
Mac and Cheese

Many of the best meals are leftover meals, and the grandma knowledge of how to make them is being lost as people say dumb shit like, "I don't eat leftovers."
Favorite leftover meals include;
turkey soup
bean soup
open faced roast meat sandwiches w/gravy
Cuban sandwiches
Chicken salad
Fish en vinaigrette
Fried rice
Frittata of leftover pasta
Chili
