Do you have a meat thermometer?
I pull my steaks at 127F. That's a fine line between rare and medium-rare. It's the sweet spot.

I don't even need to use a thermometer, since I've been cooking steak for years and years, I know just when to pull it, but for novices or people who are learning to get their steak at the exact stage they want, it's pretty indispensable, and you won't lose the juiciness from one poke of a probe.

Medium rare is my usual order. But I don't mind even raw meat. So I could probably order rare and be happy with it.
