Which of these hot sauces would you use on your omelet?
I'd try that scotch bonnet sauce. I know what the others taste like.

Depends on what's in your omelette and what kind of flavor profile you want I guess.
I've used franks on scrambled eggs a ton, but really any of them are good (except plain tabasco, the chipotle kind is good AF though).
So.. pretty much any of those.

It's a nice jalapeno sauce that isn't too piquant with vinegar. Among the rest, bleh. Other good morning choices would be Cholula, pickapeppa/lizano if you have some steak with that egg,for nice red heat, Crystal or Valentina or even Tapatio, and for chipotle style if you want a little smoky roastedness, La Guacamaya or Tabasco chipotle.
Cooked bottled style garlic in the sriracha is last choice, plus it has sugar.

I know they have seals, I did this for years. I'm very good at what I do but the risk of getting a petty charge for theft was enough of a deterrent. Now I don't need to steal and feel better morally. (Although I always returned the bottle so I don't know if that is still considered theft)
