Black bean burgers are my go to veg /vegan (if I need it to be, for some fucked up reason) recipe. Can of black beans, cup of oats, cup of cooked rice. Mix it all up, add a flavoring of choice ( they're bland otherwise). I usually mix in some bbq sauce. Then cook like a burger. Wa-la
Anything that uses cut up chicken can be swapped with pan fried firm tofu

... you're going to start having meals without meat in it five times a month.
You must be so chubby.
I don't even know where to start giving suggestions. Most recipes lack meat, or are just as good without it. I'm not saying meat is bad, it's just that there are way more other types of ingredients than there are types of meat.
good soups like lentil or miso, tomato, minestrone, split pea, stir fried veggies and shrooms
salads with hemp seed or nutritional yeast dressings
fake meat, bean burgers with egg as a binder
gardein has decentish beef tips, good cooked in wine
eat like 5 mangoes if you're feeling lazy
dried fruit is good snacking,

get not into the mindset of "vegetarian" cooking, but cooking a vegetable dish instead
anyways, I like to make vegetable pasta
I just separately saute a bunch of vegetables with olive oil, season with basil, oregano, rosemary, and mix with pasta
I do veggie tacos once a week.
pan fry fake chicken meat strips from tjs and make sure you season the hell out of it
slice radishes cilantro and avocado to add to it. slice lime squeezes. put ingredients on a tortilla squeeze lime add hot sauce if desired. takes less than 15 min.

my bad, 5 days a month
maybe a full week, along side regular vegetable eating the rest of the month

Well, that makes a little more sense.
I wouldn't go a full week. I believe three serves of meat a week is the recommended minimum if you're not committing to a full vegetarian diet.

Just look up vegetarian recipes or get a vegetarian cookbook or two. Find something that sounds good and make it.
It's not complicated.
honestly pick up a book on indian cooking, most of the country is veg only and take it from me, they are the only ones who have figured out how to make them not taste like ass
