For Italian get the Sopranos cookbook, most of the recipes are really great.

Bread Bakers Apprentice by Peter Reinhart, or Brother Junipers Bread Book by Peter Reinhart.

You could also pick up The Bread Bible by Rose Levy Beranbaum, which I've heard is a good book, but I haven't personally read it.
