Today we're gonna make something I had the pleasure to eat some time ago and wanted to try making: feijoada, a Brazilian bean and meat stew.

You will need black beans, dried beef, bay leaf, pork chops (ideally smoked), bacon, sausage, onion, garlic, cumin, coriander, cayenne, parsley, olive oil, bread crumbs and orange zest.

Some of you will realize there are no beans or dry beef pictured, and that would be because I started ahead because cooking that stuff takes ages.

For you though, you will soak the beans overnight, then simmer them in water about 2 hours, chop your beef and add it to the beans, to simmer an additional 2 hours.

I'm about 3 hours into the cooking so I'm now starting on the rest now. Here's how the beans are looking.

Cut some bacon up and cook it until almost crisp. If some burns to the pan that's fine, just means more for deglazing later.

It's a bit of an Americanized version, you can omit it if you don't like it, though do at least try the orange zest on there.

Here in brazil we use pork's feet, beef jerky, three kinds of sausage, big chunks of bacon, pork ribs and etc
