When gluten free became trending, it was put onto every product. The reason why they labeled everything as gluten free is because customers would assume that things contained gluten if it did not state that it was gluten free. However, there are certain products that are obviously understood to be gluten free, such as spices, canned vegetables/fruits, lunchmeats, etc. Grocery stores are reaching a point where they are only labeling products as gluten free if varieties and brands of that product contain gluten, and removing "gluten free" labels from products understood to be gluten free.

You wouldn't believe the things that do contain gluten though. Some shredded cheese contains gluten simply for anti-caking purposes, but most brands have switched to potato starch instead.
