I've always wondered why local places have such cheap prices then I realized because they dont have corporate overhead. Most are owned by a local dude. I live in chicago and this supermaket sells food and produce super cheap. Processed foods are still the same price but meats and produce, fresh stuff is super cheap. This is a screen from this week's local ad.
OP, I raise my own and offer a meat CSA. People pay a lot of money for what I have, but pay even more at Whole Foods or upscale butcher shops.
As a local meat market, I'd suggest offering some stuff that you can source "locally"- make sure you can tell people what farm it came from, as well as cheaper, commodity stuff. Obviously, depending wehre you are, you know what you can charge. I think a lot of people like options, and one of those options should be expensive and teh animals needed to have lived a good life.
