what's your excuse for not cooking exclusively with cast iron?
>>7224337
It's heavy.
>>7224340
lol
>>7224337
None. My grandmother gave me her cast iron that was passed down to her from her grandmother. My dutch oven is my favorite. You can do anything with that.
>>7224337
Just got myself a cast iron Le Creuset dish for christmas and it's fucking great tee bee ehch
I still need my stainless steel cookware for acidic foods
best thread ever.
>>7224353
like this one it is
>not wanting to own cookware that gets more useful the more it's used
I'm using carbon steel.
>>7224337
I'm a Nature magician
I use a non-stick pan instead, it's lighter, stuff doesn't stick a easily and easy to clean.
>>7224394
>non-stick wears off
>have to buy another one
>>7224397
I've had it for several years and it hasn't deteriorated yet.
I like eggs
>>7224394
I like how you can clean non stick pans as if they were a real dish. My brother was using this cast iron pan over and over again and cleaning with oil and salt or some shit LOL
>>7224543
You still can't use a scourer with non-stick, which is the main part people have trouble with.
>>7224409
If it uses capholon style nonstick lining it'll last like 5 years top and then chip into a disgusting mess
>>7224353
"Eh" is a representation of the short e sound as in "den" - the sound of the name of the letter H would be better transcribed with the diphthong "ei", as in "Eitch".
>>7224337
>what are pan sauces
>>7224360
perfect! use mine for bolognaise and stew
>>7224543
I didn't clean my cast iron pan I just heated it up until it was smoking then cooked with it. It used to leave this nice brown coating on the food.
>>7224337
because you cant see the sucs/caramelization that's on the bottom of the pan..
>>7224797
My kitchen is full of new T-Fal goods. I thought it was a meh brand but them pans are great so far.
If you season your pan, how do you actually clean it without washing?
Stoneline musterace
>>7224355
this
Because I got a pantry full of Calphalon
>>7224337
Copper is a better conductor of heat.
>>7224337
feel free to call me an idiot, but I never figured out how to clean a cast iron pan. I have a brand new cast iron sitting in my room, never used it cause I don't know how to clean it after cooking stuff.
advice /ck/?
>>7224974
you do wash it, just not with soap
>>7225051
Just put it in the oven and set to "Clean", WALA
Do over easy eggs not stick in a cast iron?
>>7224337
It's not supposed to be used for certain things but works great for other things
I live in a cheap rental apartment with no oven. I have to rely on a shitty portable stove that barely manages to boil water at the highest setting. Decent cookware isn't going to make things much better.
Because different pans are good for different things?
>>7225125
Much thanks for the advice anon, I'll try using it for breakfast tomorrow.
>>7225147
>>7225051
i use a chainmail scrubber for mine
it's not rough enough to flake off the coating, but gets all the gunk that was from the last cook off
rinse with water, dry off with towel on the outside, napkin on the inside
if your pot ever gets "too dirty" it's safe to use soap & sponge for a nice clean then continue process above again, it won't strip off any seasoning if you do it once and a while
lazy
unconvinced
in that order
Because stainless steel is much more versatile, is lighter, and not a hassle to maintain.
>>7225098
move out of the ghetto.
>>7224362
I do anon and it definitely isn't cast iron.
Not to mention it only cost $20.
It's not good for precision
>>7225568
Nice one, Yoda.
>>7224340
Then get find vintage skillets. My Griswold is easily half the weight of my lodge skillet.
>>7224838
Something your average ne/ck/beard thinks is a scam
Remember kids, if it's nice, then it's something pretentious yuppies fabricated in their liberal fantasies
Hamburgers, bacon, and steak are the only foods that exist. All food is the same, except when my cheap shit is compared to your nice shit, in which case in this one instance, my cheap shit is better.
>>7225640
I have never heard anybody say pan sauce is a scam. It's one of the fundamentals.
I do.
Two different sized cast iron skillets, two different sized cast iron dutch ovens, cast iron meat grinder. My downfall? New apartment is electric stove.
>>7224337
I love my cast iron I have 3 skillets and one dutch oven, but it's not for everything. I love cooking in my wok when I need too.
>>7224337
Because I like to male pan sauces using acidic ingredients like wine & lemon
I also like to have more control over the heat in my pan
>>7225482
this. A chainmail scrubber will get rid of any stuck crust
>>7225819
i'd like to male your pan sauce if you know what i mean
>>7224362
nice handle, faggot
did it come with a case of tampons?
>>7226335
No. What does menstruation have to do with cooking?
>>7224337
Because I've taken to using a DeBuyer carbon steel pan for a lot of what I do in the kitchen. Cast iron definitely has its place, but I like the slight bit of additional flexibility offered by the lighter build and more conventional "fry-pan" shape of the DeBuyer; stir-frys are tough to pull off in a cast iron pan, in my experience.
>>7224337
I can afford Le Creuset.
>>7224337
What's my excuse? It's that cast iron pans are great for some things and shit for others. You only need like 4 pans:
1. cast iron skillet for searing meat and making cornbread
2.nonstick pan for eggs
3. carbon steel wok for stir fry
4. Le Creuset (or poverty equivalent) dutch oven
>>7226943
>4. Le Creuset (or poverty equivalent) dutch oven
I meant to add "for everything else"
>>7224337
its really inconvenient to boil water with them
