Hey /ck/, my gf has developed an allergy to milk (Not an intolerance.) Anyone got any decent lactose/milk-free recipes for some decent meals I can cook for her? Preferably not hot/spicy as she doesn't really like that sort of thing.

I can't have dairy either - you can literally just substitute 1 for 1 with almond, coconut or soy milk. I find almond has the creamiest taste but Alpro does a soy cream that tastes pretty good. Their yogurts aren't bad either. Also coconut cream is good in coffee.

You can use nutritional yeast if you're lacking umami.

Most asian cuisine is dairy-free which makes eating out easier.

If it's only cows milk then you can try using buffalo mozzarella or goats and sheeps cheeses. I'm intolerant to the protein in cows milk so I eat these when I need them.

If you tasted them side-by-side then the thing made with fake milk will be inferior but I can't actually remember what dairy tastes like so food still tastes good to me. Plus I cook dairy-free for others and they don't seem to notice.

Pretty much. It's super easy, you can just sub dairy milk for any dairy substitute. Ask which is her favorite, or just try them, they all have a different quality which can be better or worse in certain dishes. I agree almond is probably the best all-purpose. You could also make tomato-based pasta dishes, most soups (like beef barley, chicken noodle, etc), hamburgers, idk pretty much anything. Cooking without dairy milk is not limiting in the slightest imo. If you eat out somewhere don't let her try to sub a normal menu item for non-dairy milk though, they fuck it up like 50% of the time or just purposely sabotage it because people HATE vegans now.
