Radishes with butter and salt, and pretty much anything if there's anchoïade or homemade hummus to dip it in.
Various leaves, taproots and a few stems from the asteraceae and apiaceae families.
I love mixed lettuce salad with shaved celtuce and fennel stems, shaved carrots and sprigs of parsley all throughout, all with a nice balsamic vinaigrette.
Outside of salad, I like various pickled veg, such as cauliflower, carrots, broccoli etc. If that doesn't count, then (still outside of salad), shaved fennel dipped in salt. If dressing it at all doesn't count, then fine: fresh water fucking chestnuts. They're technically veg, right?
honestly, i prefer all veggies raw
broccoli, celery, carrots, lettuce, kale, mushrooms, onions, garlic, tomato (lol fruit)...
its all good raw. fuckin salads, sides, with dip, whatever id down a plate of whatever.
Pluck veggies, wash, dip on terasi.
Can't get any easier than that.
