I'm making peanut butter cookies right now and I made sugar cookies to give away to family and friends. The icing didn't come out as pretty on this batch, but they taste good.

Royal icing I made with 4 cups powdered sugar and 3 oz of egg whites.

I haven't had any problem with it. It's such a small amount of egg white to sugar, and I'd wait until it dies to eat it. My suggestion is to use good quality, fresh, refrigerated eggs. Make sure no yoke gets in when getting your white and you should be dandy.

I used that recipe to make an "outline" icine, then added about a tablespoon of water to make a fill icing that's much more runny.

i'm not positive, but i think sugar works like salt where it "cures" the egg white, preserving it and preventing bacterial growth.
