>1 cup kosher salt
>1 cup white sugar
>1 cup brown sugar
>1tbsp instacure #1
>brine 3 days
>rinse and pat dry
>season according to your taste, no salt.
>pepper, garlic, onion, paprika etc.
>smoke @200F with apple/hickory mix for 4-5hrs or until 165F
