We had this kind of cuisine on occasion in my upbringing too. It stuck more with my sister, who loves chicken gizzards, livers, and hearts. I never was particularly fond of the stuff myself though. I 100% agree on that chinese bit, though. Chicken fried rice, general's chicken, lo mein, and egg foo yung are my shit!
I'll also tell you that your tastes are particularly odd... Relatives on my dad's side of the family are pretty much straight-up hillbillies and they enjoy squirrel, rabbit, and possum, even going as far as to eat raw squirrel brain right on the kill. This is all from word of mouth from my father's experiences, so I've never witnessed this first hand (not that I'd care to) but I'd definitely never touch the stuff if I was offered any of it, either.
The rabbit would be the farthest I'd go as long as it was cooked properly.

Pretty simple actually. Reduced apple cider with tarragon, thyme, fennel seeds and orange slices. Strained and then added fig preserves and cooked until thickened. Deboned a pork butt, tied it to ensure even cooking and threw in the oven at 275 F for five hours. Glazed twice over the last twenty minutes.
