Sometimes I'll peel a few and throw them in a pickle jar to soak overnight
Pickled or cut into ribbons with a veg peeler and eaten like a leaf veg (salads).
Or juiced.

Cover in ~1:1 apple cider vinegar and water. S&P. Refrigerate for at least a few hours. Good for weeks
I like just taking bites out of it with dashes of soy in between.
99% of the time I eat them pickled or in greek salat.

Peeled and sliced with fresh tomato, thinly sliced red onion, some garlic, dill, salt, pepper, red wine vinegar and olive oil.
With a bit of 'cha and garlic powder. I think they're pretty great in guacamole as well.
