Yes. 1 medium banana = 2 whole eggs
Depends on what the eggs are meant to do in a given recipe. For most applications, no: they are not a good substitute at all. Nor is apple sauce.

You can use them in some baking, basically as something to get shit to stick together. I regularly use bananas and/or old sour cream in pancakes cause for some reason I'm always out of eggs and milk lol. They taste great though.
