I get that this is what most Americans do when they think of "stuffing" but doesn't it seem kind of stupid to stuff a bird with seasoned bread and celery? Aren't there any better stuffing substitutes than bread?

Yes, it is. I meant not exactly that but the base always seems to be bread and then whatever else you put in, stock, vegetables, spices, but my question is - Why bread of all things? Wouldn't it be better and more enjoyable to fill your turkey with potatoes or rice and veggies? Who the fuck wants to eat soaked bread?
Add lots of sage and considerably less oregano. Cook for a few more minutes.
Cube the bread. Put in biggest mixing bowl you got. I normally use my stockpot, but it is busy brining the turkey.
Cook up another batch of veggies. Liberally salt and hit em with black pepper.

Moisten with the stock, add beaten eggs. Mix, and adjust for seasoning. It should be slightly saltly and a bit moist. Refrigerate overnight. Be sure to take out of fridge 3-4 hours before stuffing the bird.
mine will have bread, celery, carrots, saurkraut, sausage, chicken stock, onions, and probably some other shit. plan on making a thanksgiving thread later but I might post my stuffing here
