Leftovers. Leftover meat. The leavings from a veggie dish that might taste good with cheese. The kimchi that my roommate's mom stocks the fridge with even though the both of us together couldn't finish it all even if we ate it at every meal.

I spread the quesadilla with greek yogurt and sriracha, then I sprinkle dill weed and thyme and garlic powder. In the center I put cheese, black beans, mushrooms and spinach. Then I fold the whole thing up and put it in a panini press for a few minutes. The yogurt glues it all together when heated.
