What i had was aerated omlette, prepared my eggs as if you would for a sponge/swiss roll, then cooked it with a lot (well not too much) butter to help make the bottom nice and crisp, while the top was foamy and airy, with a sprinkle of cheese.

1) You're not supposed to leave it exposed bro. Wrap it in plastic or put it in a container of some kind.
2) The process you're describing is the bacon drying out. It's not dangerous and has nothing to do with spoilage, but it does produce a less-than-ideal texture.
