I love canning, but it's much more of a summer/early fall thing for me.

But seriously, even crappy chain-store-bought, shipped from California apples fresh are a better apple pie filling if you want to make one off-season than canned apple pie filling, even home made.

Better apple flavor. (Boiled cider is a great way to improve it though.)

I make pie filling to sell. It does pretty well during the holidays.
And I already use Apple cider boil down in my pie filling. It's time consuming to make, a gallon of cider boils down to 8oz of syrup.

Yeah, I boil my own cider too, but I can't be assed to actually seal it up, I've never had it go bad before using (as you point out, you don't get all that much out of a gallon.)

I know it's a bit off topic, but the fact that people are BUYING canned pumpkin pie filling now for pumpkin pies confuses and angers me. First off, canned pumpkin is way tastier that the premixed pie filling, and can be seasoned to taste. Second, roasting a pumpkin and using that is easy as fuck.

Even not-so-great pumpkins make good pies.

Anyway, canning relevant comment: I made some crabapple jelly this fall that didn't set correctly. Turns out, it tastes pretty good on pancakes, and also works as a glaze for pork. So yeah, not bothering to add more apples and try to reset or any of that, just glazing all my pork with crabapple for the next year or so.
