You can use meringue powder or syrup if you're worried about raw egg whites (wven though sugar cooks them). Careful not to use roses with pesticides.

This one was interesting, fun as hell.
Heavy as fuck chocolate mousse topped with charred malt and crumbled vanilla meringue.
Served in an ashtray and with one of those tacky chocolate cigars. Probably most interesting dinner I've attended, entire theme was drugs. Guests were handed a syringe to inject their main course with truffle oil, among other weird things.

Not a lot of input, only if I do photos during menu development/tasting. They usually just plate a couple dishes for the staff and I grab one for photos. But often times the chef will make mine a bit prettier than what's served.

These are extremely easy to make, if you can make roll cakes. Just reserve a bit of batter, add food coloring, pipe onto pan-liner, freeze for 10 minutes, pour remaining batter on and bake as normal.
