If Kino's Journey/ Kino no Tabi is my favorite animu and one of my favorite shows, will I also like/ love Spice and Wolf? I get a very similar vibe except with romance between the traveling companions.

I haven't read Kino, but Spice and Wolf is a comfy as fuck series about traveling, yes.
There's also a pretty strong emphasis on economics and general cunning, so that helps Lawrence and Holo stand out among your typical characters.
Now in my experience most people either love or hate the series, but people who like it tend to really fucking like it, so you should give it a shot.
If you want to test it out but not commit to a book, try a few episodes of the anime or the manga. If you decide you like it, you can buy a volume of the LN. The LNs are the source material and pretty well translated, so I'd personally recommend them over anything else if you only want to try one thing.

thanks, I think I will start with the anime since I can watch some without paying right off the bat. I had heard about the novels being even better, so I guess I didn't want to start with the wrong media and spoil the experience.

It's excellent quality.
The cover is a rich chestnut color. The titling is etched into it, so it resembles a nice leatherbound tome.
All the art from the original books is included, and since the pages are so large, it's easier to see all the details. There's also a cute world map at the beginning.
It totals over 900 pages, so it's got a magnificent heft to it. There's also a nice red ribbon bookmark to keep your place.
I'm going to read it nonstop through the weekend.
