Volume 17 was in my mailbox yesterday. Only read 50 pages so far though because I'm a slow reader and haven't gotten much time, yet.

I'm still only early in the books, but in volume one when they [spoiler]held hands[/spoiler] I had this shit-eating grin on my face.
There's also a lot of "Ah-ha!" moments as you figure out the economic stuff, and then later see how they're applied to make a high stakes thriller.

Also, since Volume 17 released just a number of days ago, that means there's still a big enough market in the west for the publishers to translate. As long as this one sells decently, I'd expect the new stories to get translated in the near future.

I've only read the LNs so I can't speak to how well it's adapted but the LNs are excellent.

I got the 12 mangas last week, but only have read 3. IMO LN > mangas > anime. The manga is clearer in describing situations and conversations than the anime (but that was perhaps due to poor translation in the fansub). AFAIK the manga covers only a couple of LNs and the 13th manga will be the last.

The first 3 books of the manga is the same as the first LN and the first 6 episodes of the anime. Differences are small (apart from chloe and yarei).

I've read 12 volumes, it skips a few books entirely but it seems to end the same as the ln's. It does show a few stories the anime didn't show, but skips some the anime actually does show.

It's best not to speak so soon. Volume 17 just released in the West and Hasekura just started the sequel, so I think that could really spark a renewed interest, and S&W already has an existing fanbase.
I don't know if the anime rights still belong to Imagin, but if we're lucky either they'll pick up at season 3, or a new studio will start its own adaptation from the beginning. We might also see an OVA covering the sequel.

The important thing is to keep your fingers crossed and show support. But you know, heading out and buying a book might help convince them. It's basic supply and demand, anon.
