What's the best way to crack a bitcoin wallet with a password list? I found a wallet.dat file with 3,000 BTC on it on an old HDD I thought I threw away.

You're not going to find a program you can point and click with a wordlist to get the key, and bruteforce is extremely unlikely to ever return a key.
Do you know if you used a password you created yourself or was it a password manager/generated password?
Your best bet is going through all of your old passwords and trying them but i guess you have done that.
write a list of all passwords you remember, try to jog your memory with other passwords you used around the same time.

How is it locked? If it's a password you set, you have a chance of bruteforcing with a dictionary file and some nifty coding that shouldn't be too hard if you know what you're doing
If it's a randomly generated key then you're fucked
